Week 4, here we come

Today is day 22 and I feel great. This weekend was really busy for me and I feel like I'm about to pass out, but just wanted to write a little since I haven't written in several days.

My best friend Tracy and her husband Jeff were in town, Jeff ran the Chicago Marathon today but more importantly for me, that meant going out to eat with my favorite person to eat with, Tracy. They came in town yesterday and we went to the Publican for dinner, we ordered several dishes including the Rib Eye, Half Chicken, Pork Belly and all were so good. I've never had the rib eye at the Publican, but this might of replaced my old favorite, the sicilian fish stew. They even ordered coffee and dessert afterwords, which is my weakness but I didn't fold. I didn't need a bite of the home made chocolate cake.

Today, I got up early to go watch the marathon. I rode my bike about 8 miles and walked about 5 miles and in this heat it felt like a lot more. I've never watched the Chicago Marathon, and I had two friends running in it, so it was cool to see them go by around the half way point and then at the end. After I got home, I decided to do some grocery shopping and cook for some of the week. I made my own version of paleo mexican sloppy joe's, which consisted of onions, cumin, chili pepper, grass fed meat and a small can of jalepeno salsa simmered and served with avocado, green onion and lime. As well, I made a paleo pumpkin pie bar with a walnut/almond crust. It's cooling right now, so I'll post back later how they turned out as well as the recipe.



We are more then half way through and I'm looking forward to my results. I'm going to visit Steve B on Tuesday after work to get my body fat percentages, so I'm hoping the hard work has payed off.

  1. Ashley - the sloppy joes look delish (and the abundance of avocado...gets me every time). Did you just use all of the ingredients to taste?

  2. Pretty much Nuf.

    I did about half a small red onion, about a teaspoon of both cumin and chili powder, some olive oil and cooked the onions. Added the meat, cooked, then add an 8oz can of whatever salsa or pico you like and simmer until most is evaporated. I made it for lunch all week, easy to pack.

    Just a heads up, you are not going to be able to accurately track changes in body comp from your caliper measurements to an impedance test (Steve B's method.) Hydration state affects impedance tests too much.

    Better to be more consistent with your measurements over time (i.e. use calipers again).
