One week left

Okay, so we have one week left and we can do one more week easily. Though, last night I had a dream about Peking duck and moo shu pancakes, primarily Sun Wah BBQ, which if you have not been in Chicago, then you are missing out. So most of the day I dreamed of pancakes. I found a recipe on MDA and decided to give them a try for dinner. The first two came out pretty bad, they were thick and stuck to the pan, but once I made the cakes a lot smaller, they worked out great. I decided to place some chicken in the little pancakes and drizzle with a little maple syrup and hmmm these were good. Yeah maybe not too paleo with the maple syrup, but I had a dream.




As well, Maddie enjoyed the extra coconut milk I had from the recipe. Dog gone paleo!



Recipe per Mark's Daily Apple:

Ingredients:

4 eggs
1/4 cup coconut flour
1/4 tsp vanilla extract
1 pinch nutmeg
1 pinch cinnamon
1 tablespoon honey
1/4 cup coconut milk (full fat)

Method:
Mix these ingredients and let them sit for five minutes. Oil or grease up your pan and heat over medium heat. Pour about a 1/4 cup of batter for each crepe, allowing each side to brown before flipping it.

I added one mashed banana to the ingredients as well I whisked the egg whites separately then folded them into the rest of the ingredients at the end to add extra fluff

  1. I keep seeing post and recipes on stuff mimicking food such as crackers, pancakes, muffins, and cookies. I am curious to find out how often we are eating this type of stuff.

  2. I wouldn't suggest eating paleo pancakes, cookies, muffins every day but I don't see why you can't have them in your diet in moderation as it's a better choice then cheating and having real flour and real sugar. Everyone has their own opinion on these items I know.
