Paleo Banana Walnut Muffins

I made this today and it was really good. No dairy, no sugar and tastes like it's made with butter. Very satisfying so I thought I would share. Just a note, I did a google search for Paleo Banana Bread and then combined several of the recipes to get mine, so I cannot credit one. As well, I gave this to Justin to post on the WCCF site.



Ingredients

2 cups of almond flour
1/3 cup of coconut flour
2 1/2 teaspoons of baking powder
1 teaspoon of kosher salt
1 rounded teaspoon of cinnamon
1/2 a teaspoon of fresh nutmeg
1 cup of toasted walnuts (place raw walnuts in oven on 350 for 15 minutes) cool and chop
2 ripe bananas
1 T vanilla
3 eggs at room temperature
3 tablespoons of coconut oil
3 tablespoons of nut butter (almond, sun, hazelnut, macadamia, cashew)
2 tablespoons of no sugar added unsweetened apple sauce

Combine dry ingredients and mix together. In separate bowl, combine wet ingredients and whisk until smooth. Combine dry and wet ingredients until well blended and then evenly distribute the batter amongst a muffin pan, bread or cake pan. Bake at 350 for 15 minutes, let cool and enjoy.
