I appreciated Yaz's recent post about being crazy busy and using protein powder to get her breakfast game on.
You all have been doing so well on this challenge. I'm so impressed with the small tweaks, disciplined cooking regimes and nose-to-the-grindstone dedication at the box.
I'm with you in spirit. And I'm holding on to paleoness most of the time. I joined this challenge not to win it ( wished that I could at least give you all a solid fight) but to provide myself with a nutritional support group! You rock.
I'm stressed the fuck out. I have so much going on that I can hardly keep my head straight. And that's on top of having two other souls under my care. I'm experiencing 4 major life stressors. Most people only exp one at a time, maybe two. But life is life. Wanna hear about it? Didn't think so.
Having accountability to you all and also reading the posts has been extremely helpful and encouraging to me. On days I want to get completely drunk (I'm not a big drinker) or drop my face in an entire Dinkels sheet cake, I tell myself "the choice is NOW. The next minute is another time". This has helped because often moments of stress arch, release and then re arch, etc. like a wave, I guess.
I'm sort of bitter that I can't get myself into the box more often. The times just don't fit into my schedule at all. I'm struggling to take care of basics: sleep consistently. Eat consistently. Be thankful consistently. Try to have fun and be creative. Sleep has been the only thing I've been working. I was a walking zombie at the Oly meet (we stayed out until 1am, that's 2am chi time - ouch!). In lieu of eating garbage (most times) I just don't eat. Or don't eat enough. This blog has allowed me to take a leaf out of everyone's book; Dingo (i need to eat more too!), Yaz (preparation yeilds awesome results), Ashley (creativey rarely tastes bad). I've not been to Chipotle but have hit Mexican joints and got tacos with no tortilla and a side of dirty look.
Today I made crock pot chicken tacos. They rock. I eat it on top of lettuce or just straight out of bowl. I also tried a "Sweetie" apple. Kinda mealy but sweet. Sticking to Honeycrisp and Galas.
1.5lbs of skinless, boneless chicken thighs
1 diced onion
1 jar of salsa
3 TBL of taco seasoning (I make my own)
Add meat and onion to crock pot
Mix seasoning into salsa
Pour salsa over the meat
Heat Low for 6-8 hours. Your house will smell like tacos (it's good and bad. When you walk in after work, you remember rejoicing that you planned and made your meal 10 hours and you can eat immediately)
Leftovers make a great tortilla soup.
Add 4 cups of low sodium chicken broth, cilantro
- non paleo adds corn and red beans
Hang in there Beck. I think the idea of accountability on this blog has kept all of us (more) in line than if left to our own devices. If we are improving we are succeeding. So savor those moments...like this morning - though a whey protein shake is not the "real food" I was striving for - it wasn't terrible and a fine choice given the circumstances and considering my prior food choices.
