Although we (and I mean the royal We) reached a low point during lunch today (I swear my stomach has been upset ever since Chipotle) we rose from the ashes for dinner! Taking a recipe from the cookbooks Sheena loaned me (I promise to bring them back soon!) I made a beef and zucchini casserole. The recipe is kinda small so I would suggest doubling it (as I will when I make it in the future). For now though I will provide the original recipe:
- 1 lb ground beef
- 1 small zucchini thinly sliced lengthwise (recipe called for 2 but I only needed one)
- 1/2 cup diced onion
- 2 cups sliced mushrooms
- 2 cloves minced garlic
- 1 cup chicken broth (I used beef since that's what I had open)
- 2 tsp arrowroot powder (recipe called for 3 but I cut it down and it was fine. and I know not technically paleo but it really did add a nice thickness to the sauce).
- 2 tsp almond meal
- 1 tbsp olive oil
Add the olive oil, beef, onion, shrooms and garlic to a large skillet. Brown the meat over medium heat.
Meanwhile, combine the broth, arrowroot, and almond meal in a small pan. Heat on medium, stirring often, until a thinck gravy forms.
In an 8" baking dish, start layering the casserole by covering the bottom with zucchini strips. Spread some meat over the zuchs, then add some gravy. Start another layer of zuchs. Continue adding layers of zuchs, gravy and meat in that order - finishing with meat and gravy.
Bake in the oven at 350 for 40 minutes, then serve. Yum!
