Cholesterol Concern

Out of serious concern for my cholesterol, I'm going to need some other meat recipes for my consumption. Don't get me wrong, I love me some good encased meats but I fear that I may have a heart attack of some sorts before this challenge is over. I'm kind of over chicken these days, as I have been brinning and roasting a chicken a week for the past 2 months now. What meat do I eat?

  1. Honestly Laney, I think you would be surprised how well your cholesterol fares on paleo. In a land and time before crossfit, Mike used to be on cholesterol drugs. Since switching to a mostly paleo/primal diet his cholesterol has actually gone down. What is this diet? He eats 5 eggs and 4 pieces of bacon everyday for breakfast as well as meats that are mostly of the red variety. That diet plus crossfit brought his cholesterol down to excellent levels. MarksDailyApple.com has a lot of great info on eating "clean" and its impact on cholesterol.

    Now if you are simply getting sick of red meat (which is understandable), have you tried pork in a slow cooker? Like a pork butt? Or perhaps some pork ribs in a spicy tomato sauce? What about an easy chicken thigh/bacon/mushroom/red wine dish? (I know you may be sick of chicken but it is delicious). If any of these interest you I am happy to pass along the recipes....

  3. I was thinking fish as well, I have a recipe I can share with you that has olives, olive oil and lemon and halibut that you bake. Looks super easy.
