Out of serious concern for my cholesterol, I'm going to need some other meat recipes for my consumption. Don't get me wrong, I love me some good encased meats but I fear that I may have a heart attack of some sorts before this challenge is over. I'm kind of over chicken these days, as I have been brinning and roasting a chicken a week for the past 2 months now. What meat do I eat?
Honestly Laney, I think you would be surprised how well your cholesterol fares on paleo. In a land and time before crossfit, Mike used to be on cholesterol drugs. Since switching to a mostly paleo/primal diet his cholesterol has actually gone down. What is this diet? He eats 5 eggs and 4 pieces of bacon everyday for breakfast as well as meats that are mostly of the red variety. That diet plus crossfit brought his cholesterol down to excellent levels. ReplyDeleteNow if you are simply getting sick of red meat (which is understandable), have you tried pork in a slow cooker? Like a pork butt? Or perhaps some pork ribs in a spicy tomato sauce? What about an easy chicken thigh/bacon/mushroom/red wine dish? (I know you may be sick of chicken but it is delicious). If any of these interest you I am happy to pass along the recipes....

ReplyDeleteI was thinking fish as well, I have a recipe I can share with you that has olives, olive oil and lemon and halibut that you bake. Looks super easy.
