Yaz Day Two - Peaking too soon?

So I woke up this morning feeling like a paleo champion. Dairy sounded disgusting and glutens were a distant memory. I felt very pious. But in the midst of this glow I wondered "Am I peaking too soon?" After all, it is only Day Two - and Mondays are certainly never a good test for any lifestyle/diet change. Anyone can conquer a Monday. The true test of paleo success will come on a cold, dreary Saturday in October. I feel it. But even so - Monday was a success. Here's the skinny:

Breakfast: Instead of my usual chemical filled protein shake, I opted for two pieces of bacon and an egg. Breakfasts are difficult for me as I get kinda grossed out by food in general in the morning. Almost heaved up this particular meal. Not sure if we will continue with these menu options. Tomorrow I think I'm going to go with an apple and some nut butter. Although I wonder if that will that be enough protein? Hmm.

Lunch: Two large Paleo meatballs. My recipe was similar to Ashley's (though I'm glad to see she gave exact measurements on the herbs (something I didn't have) and they are a wee bit over-garliced). I cooked them in the slow cooker yesterday with a small can of tomato paste and two cans of diced tomatoes, plus a handful of torn fresh basil. Delish and filling. To cut the grease I had a banana/date/nut/carrot muffin. My fave. If anyone wants the recipe it is on elanaspantry.com. Really cuts the sweets craving.

Snack: Apple and nut butter. The good news is it was a fantastic snack. The bad news was I had to eat it on the L. Gross.

Din: Slice of Ashley brand meatloaf. Thought about another muffin or an apple but I was feeling pretty good so I passed.
