Good day for Ashley

Second day in and I feel great. It was a pretty easy day at work, no real temptations though when I walked in I forgot that some of my colleagues gave me a shit load of Reese's PB Cups last week, so I had to give them away and that made me a little sad this morning. But, none the less, I prevailed.

Meals:

Breakfast - 3 paleo meatballs, side of butternut squash and spinach curry




Snack - Small green apple with a large tablespoon of sun butter, handful of almonds
Lunch - Spinach salad with carrots, broccoli, red cabbage and double turkey with olive oil and fresh lemon



Snack - Handful of raspberies, one paleo meatball pre workout
Dinner - 3 more paleo meatballs, with no sugar added tomato sauce and a 1/4 of a spaghetti squash



I have to say at work, there was a point where I thought I needed some more fat, I'm going to throw half an avocado in tomorrow to see how I feel.

I sent in both the butternut squash recipe and paleo meatballs to Justin, as well told him I would have a lot more recipes in the next 6 weeks, so hopefully he'll post them more frequently then he does now. I made a lot of the paleo meatballs b/c they seem pretty versatile and who doesn't love meatballs?

Paleo Meatballs

2 lbs of grass fed ground beef
1/2 cup of almond flour
3 cloves of garlic crushed and chopped
1/4 onion finely diced
Handful of fresh oregano roughly chopped
10 button mushrooms finely diced, if you have a food processor use it
2 eggs
Pinch of kosher salt
1/2 tablespoon of black pepper

Combine all the ingredients together and form into balls. Pan fry the balls on each side for about 2 minutes per side in some olive oil (don't overcrowd the pan, do in batches) then place in a 350 degree oven for 20 minutes.
