I'm not technically doing this challenge, but I'm still keeping up my paleo eating at least 92% of the week. It obviously gets a lot easier as time goes by and your tastes start to adapt.
Just a few food ideas for vegetables that I would like to share.
Today at whole foods, cans of organic pumpkin are 39 cents. This is a great side as you place it in a bowl, heat in the microwave for about a minute. Heat up some coconut oil and add in two tablespoons with some cinnamon and sea salt and it's really good and cheap.
I emailed Justin a great recipe for mashed sweet potatoes for the holiday. You take three medium sweet potatoes and bake at 350 for an hour to an hour and 15 minutes, until a fork easily goes through the taters. Place to the side. On the stove top heat up 3/4 cup of whole fat coconut milk, 1 tablespoon of freshly grated ginger and 1/4 teaspoon of sea salt and bring to a small simmer. Peel the sweet potatoes and mash with a masher and slowly stir in the coconut milk mixture. This shit is legit and no added sugar. I will be making this during the holidays.

Ashley - glad to hear you came down from your sugar high this weekend of dumb dumbs and snickers. Thanks for posting the mashed sweet potatoe recipe! I was looking for one to make for Thanksgiving. Am I making these or are you making these?! If so/not, we should decide who is making what. Mmmmm...so excited.
