Homeward stretch

Just thought I'd post two different meals that I have enjoyed this past weekend.

I went to the green city market on Saturday, with Damon and bought some different types of sweet potatoes that I haven't seen at the market. I have finally figured out the perfect formula to bake sweet potato/squash/carrots that is really good. I cut up whatever I'm baking into fry like size, place them in a bowl and toss with a little olive oil, a pinch of sea salt and a palm full of cinnamon, toss everything and then spread on a baking sheet and bake for 20 minutes. Then turn the broiler on and check every 5 minutes until the vegetables are done to your liking. If you make sweet potato like this and broil for about 10 minutes, they taste similar to crispy french fries and are amazing.

I took some of these sweet potatoes, cooked a Hungarian sausage in bacon fat, place the cut pieces on top of the sweet potato then placed a poached egg on top and I was very happy.



Yesterday I cooked a pork shoulder most of the day with a little sea salt, some freshly squeezed orange juice and water to make carnitas and had that for dinner with an avocado, some red onion, cilantro and hot salsa. This was very good. I'm dreaming of carnitas for breakfast with a poached egg on top.
