The Cracker Recipe



OK - enough about last night. It is but a distant memory as I am back on track after a wonderful breakfast of sausage, eggs and almond bread.

By popular demand here is the cracker recipe. It really is delicious for anyone missing a crispy treat.

1 cup almond flour
1 large garlic clove, finely chopped
1 tsp olive oil
1 egg white
Good dash of salt
Dash of paprika

Pre-heat oven to 350. Place all ingredients in a bowl and combine well. Place mixture on a sheet of baking paper, and place another sheet on top. Roll mixture out into 3-4 mm thickness using a rolling pin. Score pastry with the back of a knife into individual square pieces. Carefully remove the baking paper from the top of the pastry, then holding the baking paper on the bottom, move onto oven proof baking tray. Place in oven for 15-20 minutes, or until slightly browned. Brush top with olive oil and sprinkle with some more salt. Let cool and then break crackers into individual pieces.

  2. The bread is from elanaspantry.com. It is her original bread recipe (not the 2.0). I think I like it better than the 2.0. Here's the recipe...

    Gluten Free Simple Bread
    2½ cups blanched almond flour
    ½ teaspoon celtic sea salt
    ½ teaspoon baking soda
    3 eggs
    1 tablespoon agave nectar
    ½ teaspoon apple cider vinegar

    In a large bowl, combine almond flour, salt and baking soda
    In a medium bowl, whisk the eggs, then add agave and vinegar
    Stir wet ingredients into dry
    Scoop batter into a well greased 6.5 x 4 inch loaf pan (I used a 7x3 pan)
    Bake at 300° for 45-55 minutes on bottom rack of oven; until a knife comes out clean
    Cool and serve
